The health benefits are as beautiful as the salad itself! The vitamin A in mint supports the immune system while the menthol, a major terpene found in mint, combats inflammation and oxidation. Grapefruit, as I have mentioned in other posts, has minerals like potassium which helps manage blood pressure. Fennel, a diuretic, helps flush the body of toxins and may reduce bloating caused by water retention. The greens are also rife with beneficial fiber and hydrating minerals. ✨

Salad Ingredients:
-2 pink grapefruits (segment 1 1/2 for the salad, save a ½ for the dressing)
-1 avocado, sliced
-1 bulb of fennel, sliced
-Mix of spring greens, i.e. pea shoots, watercress, fava greens
-2 sprigs of mint
Dressing Ingredients:
-2 tbsp olive oil
-1 tbsp champagne vinegar
-2 tbsp chopped shallots
-salt and pepper
-grapefruit juice from ½ of grapefruit
